Description of the research activity:

The research activity will include the following activities: (i) microbiological, chemical, and nutritional (e.g., antinutrients) characterization of the selected by-products to ensure their suitability as substrates for microbial growth and process reproducibility; (ii) mixed starter selection based on fermentation kinetics, key enzymatic activities and production of nutritionally relevant functional compounds; (iii) definition of the key parameters of solid and liquid state fermentation to enhance hydrolysis of complex carbohydrates and proteins and functional compounds release; and (iv) use of bioreactors.
